Trip Description
Spend some time in Quebec city! The ramparts surrounding Old Quebec are the only remaining fortified city walls in the Americas north of Mexico, and were declared a World Heritage Site by UNESCO. The historical area of Quebec city is very European in feel, from the narrow cobblestone alleyways, to the artisanal boutiques and french spoken in the streets - you will feel as if you are no longer in North America! Enjoy your stay in the city, with private airport transfers, a private walking tour focusing on the culinary side of the city, and a full day trip into the hinterlands taking in the impressive site of the Montmorency Falls, the stunning Basilica of Ste Anne de Beaupre and discover the wonderful natural environment at Ste Anne Canyon where you can cross over suspension bridges above the canyon and enjoy the views from the many scenic outlooks. Then take to the water on a sailing excursion along the Saint Lawrence river onboard your private chartered sailboat with the captain at the helm. Quebec
Located in east-central Canada, Quebec is the only Canadian province with a predominantly French-speaking population and the only one whose sole official language is French at the provincial level. Quebec occupies a territory nearly three times the size of France or Texas, most of which is very sparsely populated. More than 90% of Quebec's territory lies within the Canadian Shield, a rough, rocky terrain sculpted and scraped clean of soil by successive ice ages.
Quebec City
Quebec City is the capital of the province of Quebec. Founded in 1608 by Samuel de Champlain, Quebec City is one of the oldest cities in North America. The ramparts surrounding Old Quebec are the only remaining fortified city walls in the Americas north of Mexico, and were declared a World Heritage Site by UNESCO. Quebec City is internationally known for its Summer Festival, Winter Carnival, and the Château Frontenac, a hotel which dominates the city skyline. The National Museum of Fine Arts and Museum of Civilization are found near Vieux-Québec. Other attractions near the city are Montmorency Falls and the Basilica of Sainte-Anne-de-Beaupré.

Day 1: Quebec City

Immerse yourself in the culinary side of life in Quebec city as you are brought on a private guided walking tour of the city with a focus on all things food related. Enjoy a visit of Les saucisses des Iles-de-la-Madeleine, located at the Old Port Market (Marché du Vieux-Port de Québec), where you will get to sample some of the artisanal products. Then make your way to Le Chocolatier, located on St-Jean Street just outside the St-Jean Gate. Here you are invited into the exhibition hall to gaze upon the impressive collection on display before sampling some of the delights!

Montmorency Falls
Day 2: Quebec City
Today is a day for exploring the hinterlands of Quebec city. Accommpanied by your guide and private vehicle, head out to the Beaupre Coast and learn about this interesting region and how it influenced certain elements of the United states history. Enjoy a stop at The Montmorency Falls which cascades 83 metres down to the river below (30 metres more than Niagara Falls). The falls are situated on a historical site of natural beauty in the Montmorency Falls Park. A cable car runs up to the Manoir Montmorency which you can take if you are so inclined. The next place on the route is at the Atelier Paré Economuseum of wood Sculpture. Experience the interpretation of traditional Quebec legends through the art of wood sculpture; enjoy the personal contact with the artists and wander through a garden of colourful sculptures - this is truly a unique outdoor museum. Enjoy lunch at a local restaurant before continuing on to the Ste Anne de Beaupre Basilica. Your private guide will showcase this wonder of architecture as you wander through the stunning site. The present-day Basilica was built to replace the first Basilica that was destroyed by fire on March 29, 1922. The Basilica's central vault is completely covered with a series of mosaic dedicated to Saint Anne while an ensemble of 240 stained-glass windows adorn the Basilica. Fully sated, continue on to Ste Anne's Canyon and explore the imposing 74m high Sainte-Anne waterfall rumbling into its 1.2 billion year old notch. Go across one of the highest pedestrian bridges in Quebec, 55 meters high and discover the giant potholes and cascades. Try the thrilling vias ferratas and giant zip line. The site was used by John Travolta for the movie Battlefield Earth in 2000. Known by Natives, painted by artists such as Kreighoff, described by American ecologist and philosopher H.D. Thoreau. At the end of the day, you will be brought back to your hotel in Quebec city.
Consider doing a private culinary workshop in the L'Academie Culinaire in the heart of Quebec city, or make your way to the pretty Island of Orleans, located about 30 minutes from the heart of Quebec city, where you can learn some culinary secrets during your private culinary session. The island of Orleans, located 30 minutes from Quebec city, has a strong artisanal culinary focus which is obvious from the number of small, quality producers present on the island. Consider taking a private half day tour to the island and visit the various artisanal producers such as Cassis Monna, a company which has mastered the art of transforming black currants - harvested on the Île of Orléans - into products of the highest quality, including a Crème de Cassis that earned the 1995 Gold Medal Award at the prestigious European contest in Ljubljana, Slovenia. The company also produces three aperitif wines as well as a wine jelly, a syrup, an onion jam, a black currant jelly, a mustard and other black currant delicacies. The Domaine Steinbach estate, is another place worth visiting. With an orchard of 4,000 apple trees, the owners have taken an organic farming approach for apple-processing purposes, which has led to the production of various ciders (one of which is an ice cider), cider vinegar and other varieties of aromatized vinegars, as well as mustards and various other food items such as jellies, preserves, and "confit" products. - Cost increases in currency exchange, government fees, taxes, surcharges or hotel/lodge tariff increases between quote date and start date are payable by the client.
- Availability cannot be guaranteed until booked. We will exercise best efforts to book hotels per the itinerary, however, in busy seasons and with client bookings made within 90 days of tour date we may be forced to offer substitutes.
- Cancellations of confirmed bookings 90 days or more prior to departure will receive full refund minus a $350 (per person) administrative fee and any non-refundable paid fees (e.g. non-refundable airfare, cruise or hotel deposits). 60-89 days will be subject to loss of deposit. 30-59 days will be subject to loss of 50% of program price. 29 days or less will be subject to 100% of program price.
